Phenols and Aromatics

Phenols are usually considered together with other aromatic compounds, and the term "phenols" is sometimes used loosely to include these other substances. The aromatic compounds normally found in ECF are mostly derived from the amino acids tyrosine and phenylalanine or from aromatic compounds contained in dietary vegetables. Phenols constitute probably the largest group of plant secondary metabolites, varying in size from a simple structure with an aromatic ring to complex ones such as lignins.
